BwA organized yesterday, October 18, a boutique Antonutti wine dinner with twenty limited VIP seats at Mercato, by Jean Georges, in Shanghai city. This Italian spot is Jean Georges’ latest venture in Shanghai. The main concept of Mercato is offer delicious coastal Italian cuisine, where the seafood, homemade pastas and wood-fired pizzas occupy a main role, making Mercato the perfect place to host a Italian boutique wine dinner. The cosy environment with a breath taking view over the Bund helped to set the perfect scenario for this wine dinner. Sandy Yoon was the Cuisine Chef, preparing the fantastic food that was paired with five Antonutti wines.

The guests were welcomed with a glass of ANT Metodo Classico 2008, a sparkling with an elegant and complex fruity bouquet. The menu was composed by several delicious dishes. A starter with sea inspiration made the delicious of all the guests, and it was composed by a Kingfish Carpaccio with Seafood Salad that was paired with a great Pinot Grigio 2011. The starter was followed by thinly sliced Diver Scallops and char-grilled Octopus, tasted with a Vis Terrae Traminer Aromatico 2009. This boutique dinner wound´t have a true Italian mood without a homemade pasta, specially a Rigatoni with Braised Meatballs that was served with the Refosco 2010. The meat dish was composed by a grilled Beef Tenderloin, that was served with a Vis Terrae Cabernet Sauvignon “Magnum” bottle, 2008 and 2009 vintages. A special moment was prepared for the end of the dinner – guests were surprised with a special dessert wine specially bought to this dinner by Nicola Durandi Antonutti himself. Lindul “60 days Appasimento” 2010- which bottle has a special Italian illustration – was truly enjoyed by all the guests, with a special taste and aroma of the Traminer Aromatico grape variety.

The dinner had a great mood and all the guests truly enjoyed the food offered by the Cuisine Chef Sandy Yoon, paired with the five boutique wines from Antonutti, plus the welcome drink ANT Metodo Classico 2008 for the twenty VIP guests welcoming.

Antonutti vineyards are located in Grave del Friuli in Italy, with a broad dry plain and poor stony soils ideal for vines. Back in 1921, grandfather Ignazio found the Antonutti Winery, starting the Friulian winemaking process. The foresight of his son gave way to a significant grow in the production, that was furthered and renewed continuously today by his daughter Adriana, her husband Lino and their children, Caterina and Nicola, that was present in this Wine Dinner. The wines demonstrate the strength of the territory, Friuli, and testify to the tenacity of a family history that dates back almost a century.

10月18日,昨天BWA与20席VIP客户一起由Jean Georges打理的Mercato 餐厅共进了一顿丰盛的安东努蒂之夜红酒晚宴。这个意大利餐厅是Jean Georges在上海的最新据点。Mercato的主要理念就是提供美味的意大利沿海美食,海鲜、 自制意大利面和比萨饼这些主题菜肴,使 Mercato成为一个享用意大利精品葡萄酒与美食晚宴的不二场地。新鲜的露天场地加上外滩的迷人夜景,这是一场无与伦比的葡萄酒晚宴!Sandy Yoon是当晚的主厨,由他亲自准备了 五道与 Antonutti葡萄酒绝佳搭配的美妙佳肴。

ANT Metodo Classico 2008 作为开胃酒拉开了迎接当晚嘉宾们的序幕。跳动的气泡夹带着优雅而复杂的果味花香扑鼻而来。当日菜谱赫然写着好几道美食。开胃菜以皇帝鱼刺身,意大利碎橄榄和莳萝搭配上Pinot Grigio 2011带给所有客人来自大海的灵感。随其而来的第二道美食以海鲜沙拉,牛油果,柠檬和荷兰芹搭配Traminer Aromatico 2009 。一场正宗的意大利晚餐怎能少了自制的意大利面,特制肉丸头?再搭配上Refosco 2010 ,那便是再美不过的味觉体验。紧接着而来的主菜炙烤里脊搭配上Vis Terrae Cabernet Sauvignon 2008 和2009。临近结束时,一个特殊的小插曲给宾客们带来了一阵小惊喜— —由Nicola Durandi Antonutti亲自带来的一款甜品酒Lindul “60 days Appasimento” 2010 将所有客人的品尝乐趣带至了一个甜美的高潮。每一位都品味到这款 由Traminer Aromatico 葡萄品种的所带来的特别香气和口感体验。
当晚20位VIP嘉宾无一例外的尽情了整晚的5款安东努蒂的葡萄酒佳酿和由Sandy Yoon主厨带来的美食佳肴,当然还有那款令人记忆深刻的ANT Metodo Classico 2008欢迎开胃酒。

安东努蒂酒庄位于弗留利地区的格拉韦斯,该地区是一片广阔干燥的平原,贫瘠而多石的土壤非常适合种植葡萄。1921年,Ignazio创建了安东努蒂酒庄,开始酿造弗留利葡萄酒。他的儿子极具远见,致力于大幅度提高产量,如今该策略被其女儿Adrinana、女婿Lino及他们的儿女Caterina和Nicola(今晚出席的重要嘉宾)继承发展并改进。弗留利的葡萄酒既表现了它的风土特色,又诠释了一段历经百年的家族历史。

Two purposes:

1. Separate older wines from their sediments (otherwise, they would have an astringent taste).
2. Allow the wine to slowly come in contact with air in order to show all the aromas and flavors.

How to do:

Put the bottle vertically for 24h to deposit the sediments on the top of the bottle. Open, start pouring the wine slowly into a decanter against a candle, for example, to make sure that no sediment is poured into the decanter.

醒酒的两个目的:1.分离陈年酒的沉 淀物 (否则会带有苦涩 味道); 2. 让酒体充 分接触空气,以释放所 有的香气 味道. 如何做: 垂直放置 酒瓶24小时,让沉淀物 聚拢在瓶底,打开酒瓶,将酒慢慢倒入醒酒器,注意不要将 瓶底沉淀物倒入器皿中。

4. How to Taste Wine 如何品酒 

Inspect the cork – must be intact and the only trace of wine must be at the bottom. Give a quick sniff to check if the wine is good. Pour a small amount at the glass and swirl it vigorously. Smell and taste. 

观察软木塞,确认软木结构紧实 只有在木塞底部有红酒印渍。 快速闻一下,辨别气味没有变质

在酒杯中倒入一点酒,轻轻 摇晃酒杯,闻一下,尝一口。

 

5. How to Pour Wine 倒酒的学问

 Wine must be poured slowly toward the center of the glass. It must be filled only below the widest section of the glass, so that the customer can swirl the wine without risk of spillage. End serving slightly rotating your hand, so that the wine doesn’t drip. 

轻轻将瓶口悬于酒杯中央上方倒入杯中。酒倒至酒杯肚处即可 这样客人在摇晃酒杯时就不会轻易将酒洒出。倒完一杯酒后应将瓶口迅速转半圈,并向上倾斜,以免瓶口的酒滴至杯外。

3. How to present and open a bottle of Wine 开酒的技巧

1. Present the bottle holding it by the bottom, with a napkin on the left arm. After showing to customer, present the label – name, designation, winery, grape varieties and alcohol, with the label turned into the customer, by the right side. After opening, the wine must be served in the glass. 

左手用餐巾扶住瓶身底部,酒标向外,向客人展示此酒的完 整酒标信息:酒名,酒庄名,葡萄成分。酒精含量等。同时, 由左往右转动瓶身,展示完整前标和背标信息。应在每一 个客人的右侧逐一倒酒。打开瓶盖以后,必须将葡萄酒倒 入红酒杯伺酒。

 

2. Place the foil cutter (knife part of the opener) under the lip and cut around the bottle. Press around the lip until removing the foil. Press the opener into the center of cork, turning clockwise while you twist the bottle anticlockwise in your other hand. Don’t go any further into the cork. 

将开瓶器的割纸器部分放在瓶口部位,按压并沿着瓶口边缘划开 锡纸部分。将开瓶器螺 旋钻对准软木塞中央部分顺时针向下扭转 ,另一只手逆时针旋转。

 

3. Move the lever arm down against the neck (top of the bottle). Pull up on the lever firmly. The cork will gently lift up out of the bottle. With the napkin, clean the neck to remove cork remains. 

把顶针(螺旋金属部分)尖头轻压入木塞,顺势旋转进入视木塞长 度旋入顶针深度,以不刺透木塞为好。将金属头部分卡口轻轻 卡住瓶口突起部分,手握住刀身,关键是腾出食指轻轻压扣住 金属头和把柄关节处的金属头尾部,使金属头卡口卡住瓶口突起,并让食指保持这个姿态,稳定刀头和瓶口卡紧接触状况。 用力拉起把柄,在杠杆作用的拉力下(两个着力点,一个是金属头和瓶子突起卡紧部分,一个是螺旋针和木塞中 心的接触点)木塞被徐徐拔出。

 

4. In case of sparkling and white wines, maintain the bottle chilled in a bucket with ice and water. Put the napkin around the bottle and serve. Move the bottle regularly to maintain its freshness. 

如果是开气泡酒和白酒,应先将酒先放入冰桶内冷却。 在伺酒时 应用餐巾包住瓶身。

Keep wine bottles away from light. Store corked wine bottles on their sides or diagonal with the cork on top. Keep the temperature constant – all wine should be stored between 10 Cº and 16 Cº.

请勿将酒暴露于强光中,储存未开的葡萄酒时,不论是横放 还是斜放,但要保持酒塞在上。保持温度恒定——

所有的酒须保存 在10 Cº 到16 Cº之间

We had a speech from João Gago, Managing Director of BwA, and from Julien Bonnard, Wine Specialist, with a speech “Reds are also good for Summer” with some technical notes about temperature.

History

BwA is a family project from its very first day. The “hands on the vines” side of BwA is represented by the Cottini Family, from the Veneto Region, in Italy, who bring the viticulture and the vinification knowledge to ensure the highest quality and selection of our terroirs. This knowledge comes from decades of dedication to their vineyards in the region of Valpolicella, in Northern Italy. The management experience and expertise side of the business, on the other hand, comes from the Bergamaschi Family, a renowned Italian family of entrepreneurs from Milan. Hand in hand with the Cottini family, they are fulfilling the dream to share some of the world’s best wine treasures with Asia. But the company wouldn’t be complete without a “dynamic hand” working directly in the field in Asia. With 8 years of marketing and management background, João Gago worked for over three years in one of Asia’s largest wine importers, which gave him a particular insight about the Far East market. The three represented families came to discover the wine world in Asia, and China ended up conquering them.
